Almond cookies

Makes 8 | 20 minutes

Ingredients

120g almond meal

160g white rice flour

½ tsp. baking powder

80ml maple syrup

3 tbsp. coconut oil, melted

1 tsp. almond extract

24 almonds

Method

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with baking paper.

  2. In a large bowl, combine the almond meal, rice flour, baking powder and a pinch of salt. Next add in the maple syrup and coconut oil and stir to form a cookie dough.

  3. Shape the dough into 8 even-sized balls and place them on the baking sheet. Press down each ball to form a cookie shape. Press 3 almonds on top of each cookie and bake in the oven for 12-14 minutes until golden.

  4. Once ready, remove from the oven and set on a wire rack to cool completely before enjoying.
