Blueberry protein donuts

Serves 12 | 30 Minutes

Dry Ingredients:

180g Buckwheat flour

50g vanilla protein powder(or enough to provide 50g of protein)

1 tsp. bicarbonate of soda

80g fresh blueberries



Wet Ingredients:

4 tbsp. maple syrup (or chicory root syrup if fat loss is your goal!)

150g mashed blueberries

2 large eggs

125ml unsweetened almond milk

2 tbsp. coconut oil, melted

Equipment:

1 x Doughnut mould

Method

  1. Preheat the oven to 350°F (180°C) and use 2 tablespoons of olive oil to cover the doughnut moulds with

  2. In a medium bowl, whisk together all dry ingredients.



  3. In a large bowl, whisk coconut sugar and maple syrup. Add mashed blueberries, eggs, and almond milk. Stir until well combined.



  4. Fold the dry ingredients into the wet mixture. Add melted coconut oil and stir again until fully incorporated.



  5. Fill each donut mold generously. Bake for 8-10 minutes, or until a toothpick inserted comes out clean.



  6. Remove from the oven and let cool for a few minutes before transferring to a wire rack.



  7. Do not leave in the pan too long, as they will continue to bake and may become dry.



  8. Store in an airtight container in a cool, dry place.
