Beef Stroganoff - Comfort Food Done Right!

This Beef Stroganoff is a simple, protein-rich meal designed to support recovery after training. Lean beef provides high-quality protein and iron to help repair muscles and restore energy levels.
You can pair with whole grains to help replenish glycogen stores. Meals like this can also work well within a balanced weight management approach, helping you stay satisfied and energised throughout the day.
Ingredients
1700g beef, chopped into cubes
700g mushrooms, sliced
1 onion, thinly sliced
1 tbsp. apple cider vinegar
4 tbsp. buckwheat flour
2 tsp. Dijon mustard
1 tsp. paprika
750ml beef stock
2 tbsp. Greek yogurt
Method
Heat 1 tbsp olive oil in a large pot. Season beef with ½ tsp salt and ½ tsp pepper. Sear for 3-4 minutes per side.
Remove and set aside.
Add mushrooms and onions to the pot. Cook for 6-8 minutes until golden. Deglaze with vinegar.
Stir in flour, mustard, and paprika. Add beef and beef stock, season with more salt and pepper, and bring to a boil.
Cover, reduce the heat to low, and simmer for 120 minutes or until the beef is tender. Take off the heat and stir in yogurt.
Garnish with parsley and serve with rice and gherkins (optional).
