Broccoli and plant-based cheese soup
Ingredients
- 2 onions 
- 2 cloves of garlic. 
- 500g of vegetable stock 
- 2 heads of broccoli, chopped into florets. 
- 1 packet of herby or blue plant-based cheese (approximately 115g) (I love Honestly Tasty’s Herbi or KInda Co’s Blue or Garlic and Herb) 
- Mixed herbs 
Serves: 2
Prep Time: 5 minutes
Method
- Chop onion and garlic cloves. Allow to cook in the oil until they soften for around 5 minutes. Add water if necessary to stop them browning. 
- Add the broccoli and cook for 15 minutes until the broccoli is soft. 
- Take off the hob and let the soup cool for a few minutes before adding the cheese, stirring all the time. Reheat (if needed) before serving.
