Courgette and cheese soup
Cheesy, delicious courgette soup - hearty and wholesome for those chilly days.

Cook Time: 30 minutes
Ingredients
- 1.5 lbs courgettes 
- 2-3 onions 
- 2 cloves of garlic 
- 2 tablespoons olive oil 
- 1.5 litres vegetable stock 
- 3oz parmesan or blue cheese or vegan alternatives 
- 2 tablespoons lemon juice 
- 2 tablespoons of Greek yogurt or non-dairy equivalent 
- Chopped parsley or chives 
Method
- Wash and trim courgettes. Do not peel. Slice finely. 
- Chop onion and crush garlic. Allow to cook in the oil until they soften for around 5 minutes. Add more oil or water if necessary to stop them browning. 
- Add courgettes and cook for 5 minutes. 
- Add stock and bring to the boil, stirring all the time. 
- Simmer for 15-20 minutes. 
- Liquidise and add the cheese, lemon juice and season to taste. 
- Add water/stock until the soup reaches the consistency you require. 
- Serve with a swirl of yogurt or crème fraiche and a sprinkling of parsley and chives. 
- You can freeze this recipe but leave out the cheese until you are ready to eat it.
