Goat’s cheese pesto chicken
Serves: 2
Ingredients
- 2 chicken breasts. 
- 1 tablespoon olive oil. 
- 2oz soft goat’s cheese. 
- 2oz pine nuts. 
- Chopped fresh basil. 
- 2 cloves of garlic (crushed). 
- 1 tablespoon of freshly squeezed lemon juice. 
- Zest from half a lemon. 
Method
- Mix the cheese, pine nuts, basil, garlic and lemon juice and zest together in a blender. 
- Brush the two pieces of chicken with the oil. 
- With a knife, cut the chicken breasts open lengthways. Split the pesto mixture between the two pieces of chicken and 
- Place on a baking tray. Cook at 200 degrees C/180 degrees C fan /gas 6. 
- Cook for 20-30 minutes or until the chicken is cooked. 
- Serve with brown rice and steamed green vegetables.
