Pea and coriander soup
A simple soup full of green goodness!
Serves: 4
Prep Time: 5 minutes
Cook Time: 20 minutes
Ingredients
- 1kg peas 
- 2 tablespoons of olive oil 
- 2-3 large onions, chopped 
- 3 cloves of garlic crushed 
- 1 litre of vegetable stock 
- Bunch of coriander (chopped or torn) 
Method
- Add oil to pan. 
- Add the onion and garlic. Allow to cook until they soften for around 3-5 minutes. Do not brown. 
- Add the peas and stock and simmer for 10 minutes. 
- Add coriander leaves. 
- Blend or liquidise. 
- Add water/stock until the soup reached your desired consistency. 
- Season to taste.
