Protein Peanut Butter Cups
Ingredients
85g dark chocolate (70% +) (dairy-free if required) chopped into small chunks
2 tsp coconut oil
1 tbsp. unsweetened almond milk
125g natural peanut butter
30g vanilla protein powder
½ tsp. vanilla extract
Method
- Place the coconut oil and chocolate chunks into a small pot and melt over low heat. 
- Remove from the heat before the chocolate chips have fully melted, whilst mixing together the almond milk, peanut butter, protein powder and vanilla extract 
- Press the peanut butter mixture into mini silicone muffin moulds. Press down hard so the mixture sticks together. 
- Pour the melted chocolate over the top, dividing the chocolate equally between the peanut butter cups. 
- Place into the freezer to set.
