Spinach, Feta & Almond Biscuits

Ingredients

130g green onions, chopped

150g fresh spinach, chopped

44 egg whites

125g almond flour

1 tsp. baking powder

125g crumbled feta cheese

Method

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Heat 1 tbsp. olive oil in a pan and cook spring onions for 1-2 minutes. Add the spinach and cook until wilted. Season with salt and pepper and cool slightly.



  3. Mix spinach mixture with the egg whites, almond flour, baking powder, and feta cheese.



  4. Form 6 biscuits or drop spoonfuls onto the baking sheet. Bake for 20-25 minutes until the edges are golden. Cool slightly before serving

    1 biscuit = 1 serving. 6g carbs. 9g protein.
