Chilled cucumber soup

Ingredients
- 2 cucumbers (skin on) 
- 3 cloves of garlic, crushed 
- 1 large avocado 
- 6 chopped spring onions 
- 1 green pepper 
- 1 small bunch of mint 
- 1 cup of cherry/on-the-vine tomatoes 
- 1-2 scoops of protein powder 
- 2 heaped tablespoons of plain Greek-style yogurt 
Method
- Add all the ingredients together and blend. I like my soup on the thicker side but add water (or coconut milk) if you’d like to make your soup more liquid. 
- Chill in the fridge for several hours. 
- Serve with a dollop of plain Greek-style yogurt or non-dairy alternative and garnish with chopped chives.
