This low-carb granola is designed to keep you full and energised without blood sugar spikes. It works well for both recovery and weight management, especially when paired with a protein source like yoghurt.

Ingredients

Low-Carb Granola

140g sliced almonds

115g walnuts

85g flaked unsweetened coconut - optional

60ml coconut oil

2 large egg whites

Method

  1. Preheat the oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.

  2. Add the almonds, walnuts, coconut, and coconut oil to a food processor. Pulse until the mixture reaches your preferred granola texture. Add the egg whites and pulse just until combined.



  3. Spread the mixture evenly on the prepared baking sheet. Bake for 10 minutes, or until golden and crisp. Let cool completely, then break into bite-sized clusters.



  4. Store in an airtight container at room temperature for up to 1 week.
