Sweet Berry Cottage Cheese Bowl - Quick & Delicious Snack

This cottage cheese bowl combines protein and berries to support recovery while keeping blood sugar stable. It’s ideal as a quick breakfast or snack that fuels training and supports weight management.

Ingredients

Cottage Cheese Bowl:

250g cottage cheese

130g mixed berries of choice

1 serving Low-Carb Granola (see ingredients below)

1 tbsp. peanut butter

Pinch of cinnamon

Low carb granola (16 servings):

140g sliced almonds

115g walnuts

85g flaked unsweetened coconut

60ml coconut oil

2 large egg whites

Method

Cottage Cheese Bowl:

  1. Add cottage cheese to a bowl. Top with berries, granola, peanut butter and cinnamon.


Granola:

  1. Preheat the oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.

  2. Add the almonds, walnuts, coconut, and coconut oil to a food processor. Pulse until the mixture reaches your preferred granola texture. Add the egg whites and pulse just until combined.

  3. Spread the mixture evenly on the prepared baking sheet. Bake for 14-16 minutes, or until golden and crisp. Let cool completely, then break into bite-sized clusters.

Store in an airtight container at room temperature for up to 1 week.
